The ICC Birmingham Chefs bake tallest ’Croque en Bouche’ for charity

The International Convention Centre (ICC) in Birmingham’s catering team Amadeus has created Birmingham’s tallest ’Croque en Bouche’ for local homeless shelter Midland Heart.

Displayed in the ICC mall and standing at 7ft tall with 2,000 profiteroles, the dessert took a day to bake and decorate with the profiteroles individually held together with chocolate.

In total the giant ’Croque en Bouche’ required 16kg of flour, 20kg of butter, 8 litres if whipping cream, 10kg of Belgian chocolate and 50 dozen eggs.

“We received really positive feedback after last year’s longest Yuletide log, so we wanted to do something similar this year,” said Head Chef Simon Hellier. “I wanted to make something that had the wow factor and showcased the skill and expertise our kitchens are known for. I also wanted to make something luxurious for the homeless people to indulge in at Christmas.”
